
Viking Range Griddle Heating Unevenly
A griddle that browns one pancake faster than another does not by itself prove a failed thermostat. Compare where the uneven result occurs, how the surface was preheated and whether the same pattern repeats during normal cooking. Gas and electric griddle assemblies can require different service procedures.

When to stop troubleshooting
If you smell gas, leave the area without operating switches or appliances and contact the gas utility or emergency services from outside. Do not keep trying to ignite a burner. Wiring, valves, gas-pressure adjustments and appliance movement belong to qualified service.
Keep the cooking comparison meaningful
Record the selected temperature, approximate preheat period and the location of the uneven result. A large batch of cold food changes conditions differently from a small batch. Compare similar food portions rather than unrelated recipes. Do not use splashed water, bare hands or an extreme empty-surface setting as a temperature test. A service technician can make controlled measurements when needed.
Separate seasoning and residue from heat regulation
Tell the technician whether the surface was recently cleaned, refinished or seasoned. Viking griddle designs and care instructions differ, so a cleaning method used on another series may be inappropriate. Remove only normal food residue using the approved method after safe cooling. Do not grind the plate, use oven cleaner without approval or loosen the griddle to inspect a burner.
Describe whether the problem is local or complete
A persistent cold section, a whole griddle that never warms and a surface that overheats despite a low selection are different complaints. Include indicator behavior and whether other range functions operate. Heating, sensing and control checks should be matched to the appliance. If the unit becomes uncontrollably hot, turn it off safely and stop using that function until assessed.
Find the right manual and diagram
The range feature diagram identifies whether the appliance includes a griddle and where its control is located. For service, select the exact griddle assembly in the correct model documents; a similar-width plate does not establish parts compatibility.
