Note whether drops remain on plastic containers, water collects in upward-facing recesses or all items have a film of moisture. Use the options intended for the model

Do not add household chemicals or substitute liquid dish soap. Viking models do not all share the same drying equipment, so a heater-based explanation from another machine may not apply to yours.
Connect drying with the rest of the cycle
Report if dishes are also dirty, detergent remains or the cycle stops early. Those details may indicate that drying is only part of the complaint. Do not touch internal components to test for heat, and avoid opening a running machine in a way that exposes you to steam. If performance changed persistently, ask for an assessment of the complete operating sequence before a part is ordered.
